Recipe for bubble and squeak cakes

  • Boil 1kg potatoes
  • Boil 500g sprouts or other green veg
  • Add butter to potatoes; mash
  • Shred sprouts
  • Mix altogether in bowl and season
  • Wait until cool enough to handle; shape into cakes
  • Coat cakes in flour
  • Fry in 5mm depth of oil
  • Drain on kitchen paper
